Lemony Jicama Slaw
Pair this refreshing slaw with a rich meat dish. Great for those warm summer months!
- 1/2 medium jicama
- 1/4 small head purple cabbage
- 1 carrot
- 1 lemon (or to taste)
- olive oil to taste
- Grate the jicama and carrot. Finely slice the cabbage as you would for cole slaw. Combine the ingredients.
- Dress the slaw after serving to preserve colors and freshness. Salt and pepper to taste, lemon squeezed to taste, and olive oil to taste.
