Lemony Jicama Slaw

Pair this refreshing slaw with a rich meat dish.  Great for those warm summer months!

Ingredients

  • 1/2 medium jicama
  • 1/4 small head purple cabbage
  • 1 carrot
  • 1 lemon (or to taste)
  • olive oil to taste
  • salt
  • pepper

Instructions

Grate the jicama and carrot. Finely slice the cabbage as you would for cole slaw. Combine the ingredients.

Dress the slaw after serving to preserve colors and freshness. Salt and pepper to taste, lemon squeezed to taste, and olive oil to taste.
